I chickpea nuggets I am a antipasti crispy and delicious, a vegetarian variant and light classic chicken nuggets, typical of fast food. In this authentic and homemade variant, we will make these delicious legume croquettes, similar to those of potatoes, with Chick pea flourmilk, seed oil and spices. Once the mixture is made, all that remains is to form the nuggets, pass them through a mixture of breadcrumbs and corn flakes and fry the pieces in hot oil until golden: when ready, they will be soft on the inside and crispy on the outside. It is a recipe with a Middle Eastern taste reminiscent of the classic falafel, but made with chickpea flour, so even easier to prepare.

Once ready, you can serve the chickpea nuggets with a yoghurt sauce, mayonnaise, mustard or with the sauce of your choice: ideal for serving even for a whimsical aperitif.

How to make chickpea nuggets

In a bowl, mix the chickpea flour with the salt, pepper, garlic powder and paprika 1.

Add the milk, the seed oil and knead with your hands to obtain a homogeneous mixture 2.

Make small pieces of the chickpea mixture 3.

Crumble the cornflakes and mix them with the breadcrumbs 4.

Fry the nuggets in a skillet for 2 minutes on each side or until golden brown 6.

Tips

We used chickpea flour in our recipe, but you can also make these vegetable nuggets with pre-cooked smoothie chickpeas. You can also make the breadcrumbs by passing the chickpea nuggets in flour, beaten egg and breadcrumbs, before frying them. If you want to cook chickpea nuggets cookedarrange them on the baking sheet lined with parchment paper, add a drizzle of extra virgin olive oil and cook at 180°C for about 20 minutes.

You can store the chickpea nuggets in the fridge for 2 daysinside an airtight container, although it is advisable to consume them immediately after preparation, to enjoy them at their best.
