The cialleddaalso called acquasale, is a typical dish of peasant tradition, very common in Puglia and Basilicata, especially in Matera. An inexpensive and quick dish, with a rustic and classic flavor. In our recipe, we prepare the cold wafer, also called “reaper’s breakfast”: ideal for the summer season, it is prepared with stale bread, tomatoes, red onion and oregano in the basic version, but can be enriched with cucumbers or carousels, olives and celery. In addition to the cold version, there is also the hot sausage, a dish usually prepared on winter evenings using stale bread and seasonal vegetables, such as turnip greens, but also onions and potatoes. For the preparation of the wafer, it is preferable to use the Altamura Bread where from Matera: the first is characterized by a dark and crispy crust, the second by a more compact and fragrant dough. You can add any tomatoes you prefer, provided they are firm and at the right degree of ripeness, and olives, preferably the bitter ones also called Taranto or Matera olives.

How to prepare the wafer
